Gingerbread garden gnomes
Go big or go gnome! We thought we’d have a bit of seasonal fun with our gingerbread biscuit recipe and jazz up a gnome for Christmas. We used a shaped cookie cutter with an indented pattern on the inside which we dusted with cocoa powder to highlight the outlines. They look and taste pretty good without icing but if you want some fun (and to make a bit of mess!) give the decorating a go!
Instructions
- Grease three baking sheets.
- Sift flour, bicarbonate of soda and ginger into a bowl.
- Rub the butter into the flour until it resembles fine bread crumbs.
- Stir in the sugar.
- Beat the syrup into the egg and stir into the bowl, mixing to form a dough and knead until smooth.
- Roll out the dough on a floured surface to about 0.5cm and cut with a cooker cutter (people, Christmas trees, stars or snowmen!) placing them on the baking trays.
- Bake in the oven at 190C – mark 5 for 10-15 minutes until golden.
- Cool on a wire rack and ice when cool.
For the icing, mix in a little food colouring at a time into your royal icing until you have the colour you want. It should be soft enough to pipe but still firm enough to hold its form. Don’t worry if you don’t have piping tools, you can still get great results using a small amount on a spoon and a toothpick to nudge the icing where you want it.
NOTE: If you are using a toothpick to help distribute your icing, do it straight away as once it starts to dry it won’t move as easily!
