Plum jam

Simple plum jam, perfect for keeping gorgeous summer fruits on tap throughout the winter months.
Instructions
- Place the plums and water in a preserving pan and simmer gently for about 30 minutes until the fruit is really soft and the contents are well reduced.
- Remove pan from heat, add the sugar stirring until dissolved then add the knob of butter.
- Bring to the boil and boil rapidly for 10-15 minutes stirring frequently.
- Test for a set and when the setting point is reached take the pan off the heat.
- Using a slotted spoon remove the stones and any scum from the surface of the jam.
- Leave to stand for around 15 minutes then pot, lid and label.

- 900ml (1.5 pints) water
- 2.7kg (6lbs) sugar
