Plum jam

Simple plum jam, perfect for keeping gorgeous summer fruits on tap throughout the winter months.

Instructions

  1. Place the plums and water in a preserving pan and simmer gently for about 30 minutes until the fruit is really soft and the contents are well reduced.
  2. Remove pan from heat, add the sugar stirring until dissolved then add the knob of butter.
  3. Bring to the boil and boil rapidly for 10-15 minutes stirring frequently.
  4. Test for a set and when the setting point is reached take the pan off the heat.
  5. Using a slotted spoon remove the stones and any scum from the surface of the jam.
  6. Leave to stand for around 15 minutes then pot, lid and label.
