Mini muffins

Raising money is a piece of cake!

Marie Curie’s Great Daffodil Appeal runs throughout March and they’re asking everyone to wear their daffodil, and support the great work they do to care and support through terminal illness.

Baking and selling is a really fun way to bring in the money for the Great Daffodil Appeal, and Marie Curie have kindly provided us with a mini-muffin recipe to get your bake sale off to a great start.

Instructions

  1. Preheat your oven to 190°C.
  2. Line your mini muffin tin or baking tray with mini muffin cases.
  3. In a large bowl, mix together the flour and sugar.
  4. Pour in the oil, and mix.
  5. In a separate bowl, whisk together the egg and the milk.
  6. Pour the egg-milk mixture into the larger bowl and mix carefully so that there aren’t any lumps.
  7. Using two teaspoons, fill the mini muffin cases almost to the top with mixture.
  8. Bake in the oven for 10-12 minutes until the look like light golden toadstools.
  9. Allow the mini muffins to cool for a couple of minutes in the tin, before transferring to a wire rack.
  10. These are best eaten fresh, but can be stored for up to three days in an airtight container.

 

Add your own flavour!

  • Jazz up your cake, biscuit or muffin with edible flowers or glitter.
  • Sprinkle your favourite topping over the cake – from nuts to chocolate drops.
  • Try making your own daffodil decoration from icing and get into the spirit of the Great Daffodil Appeal.

  • 200g Self-Raising Flour
  • 120g Light Brown Sugar
  • 100ml Vegetable Oil
  • One Egg
  • 100ml Milk
