Tomato and red pepper soup

This delicious, autumnal recipe comes from Catherine, Maggie’s Oldham Cancer Support Specialist. Catherine uses produce from the centres garden to create this tomato and red pepper soup and dishes it out to visitors and staff who absolutely love it. Catherine says, “There’s nothing quite like being able to pick fresh ingredients from our own centre garden and turn it into something delicious and nutritious for our visitors to enjoy.”

Instructions

  1. Cook onions in olive oil for approximately 8 minutes.
  2. Add all the other ingredients, bring to the boil and then simmer for 30 minutes.
  3. Liquidise to preferred consistency.
  4. Simple!

Ingredients

  • 500g tomatoes, preferably chopped
  • 1 red pepper, chopped
  • 1 red onion, chopped
  • 1 litre tomato juice
  • 50mls Lea & Perrins
  • Half teaspoon cayenne pepper
  • 1.5 tablespoons soft brown sugar
  • Salt & pepper
